Now how about a sugar cookie? Just one won't hurt the diet. They’re really light and crisp with such pretty colors. Like this one?
You know I hate to give you a cookie without sharing my favorite Christmas morning breakfast quiche recipe. You can make it ahead and have it baking to make the house smell delicious while you open your presents.
Christmas Quiche
Ingredients
1 package Jimmy Dean or Owens sausage, spicy or regular, cooked and crumbled (Cathy recommends ½ to ¾ package)
1-½ cups grated Swiss cheese
5 beaten eggs
1-cup light cream
¼ c. green pepper
¼ c. chopped red pepper
2 T. chopped onions
1 Pillsbury pie crust, fitted into 9 inch deep dish pie plate
Cook sausage and crumble and drain. Mix cheese and sausage. Sprinkle on to shell. Lightly beat eggs, and combine remaining ingredients; add to egg mixture. Pour into pie crust. Bake at 350 degrees for 35 minutes, or until knife inserted comes out clean. Cool on rack. Serves 6 to 8.
